Walleye is among the most favorite of all table fish, and there are many recipes available to tempt the most discriminating diner. Try the following recipe if you want a healthy baked walleye recipe!

I Could Have Had A V8! Baked Walleye

1 Lb. Walleye fillets
1C regular V8 vegetable juice
1 1/2 C each:
onion, chopped
celery, chopped
bell pepper, chopped
1 T dried parsley flakes or 2 T fresh parsley, chopped
1 1/2 t. each:
pepper
seasoned salt
garlic powder

Bring all the ingredients except your walleye fillets to a boil in a sauce pan, then allow it to simmer, stirring occasionally, until the veggies are tender.

This should take from five to seven minutes.
Spray a 9X13X2 inch baking dish with non stick spray.
Put your walleye fillets your baking dish.
Pour sauce over the fish, cover, and bake at 350 degrees approximately half and hour or until the fish flakes with a fork.

**If the sauce is too thin, it may be thickened with a flour rue or cornstarch.
It tastes yummy served over rice as a side dish for your walleye bake.


Baked Walleye Augratin

Approximately two pounds of walleye fillets
1/3 Cup green onion, chopped
1 Cup sliced portabella mushrooms
1 teaspoon crumbled marjoram 2 Tablespoons dry white wine 2 teaspoons lemon juice 2 Tablespoons fresh parsley, chopped 1 1/2C shredded cheddar cheese 1 1/2C butter, melted 1 1/2C breadcrumbs Salt and pepper to taste (consider using white pepper for a refreshing difference)

Butter your baking dish (or spray it well with a non stick spray)

Put green onions and mushrooms in the bottom of the dish
Place your fish in the dish, on top of the mushrooms and onions, so that the fish just barely overlaps. Season your fish with the salt, pepper, and marjoram.

Sprinkle with the wine and lemon, and then top with your bread crumbs and cheese. Bake for approximately four minutes, and then loosely cover with foil.

Bake an additional six minutes or until the fish flakes with a fork.
Walleye Dijon
2 pounds walleye fillets
1 C breadcrumbs
1/3 C Milk
3 t orange juice
1t. Dijon Mustard
Sea Salt, black pepper, and Garlic powder to taste
Cooking spray (try olive oil spray for a tasty and healthy alternative to traditional sprays)

Preheat your oven to about 450 degrees.

Mix milk, orange juice, mustard, garlic, salt and pepper together. Put your bread crumbs into a flat container. Dip the fish in the wet mixture, and then dredge in the breadcrumb mix. Place on a non stick baking dish, and spray with the oil spray. Bake until lightly browned and flaky. Approximately 10 minutes. Turn the fish, spray again with cooking oil spray, and bake until that side is crispy.

Shrimp Baked Walleye
1 1/2pound walleye fillets
8 ounces cooked shrimp
2 T Butter
2 t lime juice
1C heavy cream
1C each shredded provolone and mozzarella cheeses
1 1/2t chopped parsley
1 1/2t ground sea salt
lemon wedges
The walleye fillets need to be rinsed and dried before beginning your recipe.
